Baker has been giving out cakes to the homeless for more than a decade: ‘They’re our neighbors’

A kindhearted baker in Charlotte, North Carolina, is proving that sweetness can go far beyond the kitchen.

Manuel “Manolo” Betancur, 49, owner of Manolo’s Bakery, has become known not only for his delicious Latin pastries but also for his compassion toward the community—especially those who have fallen on hard times.

Baker brings happiness to Charlotte’s community

As a skilled baker, Manolo fills his shop with the aroma of freshly made conchas, empanadas, and his signature Tres Leches cake.

Every pastry is handcrafted with love, reflecting the flavors of his Latin roots and the warmth of home.

“We don’t sell cakes; we sell happiness,” Manolo told Business North Carolina.

His bakery has become a staple in East Charlotte, known for its vibrant energy and deep connection to the community.

Once called Las Delicias Bakery, it was the city’s first Hispanic bakery.

When Manolo became the sole owner in 2018, he renamed it Manolo’s Bakery to carry his dream forward.

The business has grown steadily over the years. During the 2007–2009 recession, Manolo made the bold move to expand into wholesale, which helped save the business from closing.

Today, his bakery employs 20 people and has achieved over $1.2 million in sales—a testament to the fact that dedication and kindness can indeed go hand in hand.

The baker’s humble beginnings

Manolo’s journey as a baker began far from North Carolina.

He was born in Colombia, where he once served in the military before deciding to chase a better life abroad.

“I arrived to America 25 years ago, and I didn’t speak any English, and I didn’t have any money in my pocket,” he tells TODAY.

He came to the United States on a student visa with a scholarship to King University in Tennessee.

After finishing school, he married and moved to North Carolina, where he bought the bakery that would later become his pride and joy in 2005.

Since then, he has made it his mission to blend success with purpose. For Manolo, baking is not just a business—it’s a calling to make others happy.

“I am in the business of happiness,” he says. “I make money creating happy memories. And of course, dreams come true in my place. The American dream is always still alive in my bakery.”

free birthday cakes for homeless people

Manolo’s heart for service shines brightest through his project that offers free birthday cakes to people experiencing homelessness in Charlotte.

He believes that everyone deserves a special moment on their birthday, no matter their circumstances.

It began about 12 years ago when Manolo reached out to Raise You Up Ministries, a local nonprofit that supports the chronically homeless.

When he learned that people celebrating birthdays rarely received cakes, he decided to change that.

Since then, his bakery has donated hundreds of birthday cakes, each one carefully baked and topped with a personal touch.

Some are vanilla with caramel, others filled with peaches—but every cake carries the same message of love and inclusion.

Manolo and his staff deliver the cakes themselves whenever someone in need has a birthday. He says it’s one of the most rewarding parts of his work.

“We don’t call them ‘homeless,’” he says. “They’re our neighbors.”

This year marked a noteworthy milestone—Manolo’s Bakery delivered its 300th free birthday cake. The celebration reminded Manolo why he started this mission in the first place.

One day, someone from the nonprofit approached him and told him that the last recipient cried upon receiving their cake.

It was the first birthday cake that person had ever received. Manolo never forgot that moment.

“That (was) the most important cake in this bakery.”

Spreading hope through a kindhearted baker

Through his actions, this generous baker has demonstrated that success is measured not only by profits but also by the happiness he brings to others.

His free birthday cakes have become a symbol of kindness in Charlotte—a small gesture that brings immense joy to those facing homelessness.

Manolo’s Bakery continues to grow, but Manolo’s mission remains the same: to lift others up through compassion and connection.

His next goals include expanding his bakery to nearby towns and opening a gelato and vegan dessert factory in Charlotte.
